London's finest crispy fried chicken wings in a spicy Korean sauce

Where? Where can I find them? I hear you cry. In one of my favorite foodie pubs The Red Lion and Sun tucked away in picturesque Highgate Village.
The food and wine at this pub are exceptional, they won the best wine category at last years British Pub Awards. I especially love their fresh fish and seafood from Cornwall. But today's post is dedicated to one of their starters - crispy fried chicken wings.
Since meeting my boyfriend wings have definitely featured more in my life! Which is no bad thing, I think their deliciousness and versatility had previously passed me by.
What makes these particular wings so good is that they succeed in being both generously coated in a thick, sticky sauce and having a wonderful crispy texture underneath.

The sauce is sweet to begin with followed by a deep heat, just the right amount of spice.
'How do they get them so crispy?' We ask each other between devouring. Word of warning - this is a messy eat! In the natural light of the beer garden both our mouths and fingers glowed neon orange with sauce, Rob's beard was saturated and it's a miracle my white top made it through unsoiled.
We didn't care though - it felt the only fitting way to eat wings of this caliber, by getting stuck in.
When I nipped inside to the loo between courses I saw another couple sharing one portion of the wings. Even more shocking than their restraint was that they were eating them with a fork and knife!
I shook my head, looked upon them like a disappointed parent then headed back into the summer evening.
